By default when you use the {all_fields} tag for email notifications in gravity forms, any admin field label you may have set will not be used. In case you are using a shorter label for readability or any other reason that you want to show the admin field labels in your email notifications, simply modify the {all_fields} tag to be {all_fields:admin}
